Lemon Meringue Cocktail
Ready to drink your dessert and impress your guests?
Ingredients
- 70ml Gin
- 50ml Limoncello
- 50ml Lemon juice
- 1 Large egg white
- 65g Caster sugar
- 1/2 tsp White wine vinegar
Method
For the meringue: Whisk the egg whites with the white wine vinegar, then start slowly trickling in the sugar while continuing to whisk until soft peaks form. When all the sugar is mixed in & the meringue is glossy & smooth it’s ready. Add the gin, limoncello & lemon juice in a shaker with ice & shake well. Strain into a coupes & top with fresh meringue. Char the top of the meringue with a blowtorch & serve.
